Hey Moms

What are some healthy but fast breakfast ideas?

So far we do eggs (scrambled or fried), homemade oatmeal, homemade yogurt

I am trying to move myself and my kids towards a more nutritious lifestyle....my husband is trying some :-)

So What Happened?

YUM! I am hungry for breakfast just from reading all these responses. Great ideas on jazzing up some normal breakfast foods. For some reason, I never think of breakfast sandwiches and muffins. Now our breakfasts won't be so boring. Thanks!

Fruit is always a good idea.

There are lots of good cereals on the market that are high in fiber and low in sugar, for those mornings when you don't have time to cook.

You mentioned scrambled or fried eggs. What about hard boiled? You can make them ahead of time.

Muffins are also a good choice. Add bran and fruit to make them healthier.

Whole wheat or whole grain toast with peanut butter.

We do lots of eggs...eggs and spinach and mushrooms,cheesy eggs with ham and onions, etc.

We also do english muffin pizza's for breakfast (hubby and older kids love this) english muffin w/tomato sauce, fried or scrambled egg and cheese. Its like a poor man's Huevo's Rancharos?!

We also do yogurt and granola or fruity pancakes (they are so easy to make ahead of time and freeze)

Our family favorite for Sunday breakfast is either Eggs Benedict(not healthy but delicious) OR BLTEAO's (Bacon,lettuce,tomato,fried egg-over easy,avocado and onion sandwiches!) YUMMY!

We do smoothies a lot in our house. Strawberry banana is our favorite but we do lots of combos. I make it with frozen fruit (bought in season or in bulk and then frozen), milk, vanilla yogurt and a dash of honey or agave nectar--fruit and protein are great starts to our day. I also make whole-grain waffles topped with blueberry sauce (easy to make from frozen blueberries on the stovetop) then top with canned whip cream--much less sugar than the syrup! Muffins are another favorite--you can pack so many veggies, fruits and fiber into them and the kids have no idea that what they are eating is good for them. :-) Some of our favorites include Apple-Carrot muffins, Pear-Walnut muffins and good old blueberry or banana muffins. we eat flaxseed waffles topped with lowfat cream cheese instead of butter and syrup.

try adding salsa and a laughing cow cheese wedge to your scrambled eggs......low calorie and very tasty. it's good over a whole wheat english muffin!

if you're making your own yogurt turn them into a parfait but adding fresh or unsweetened frozen fruit and granola.

my 4 year old loves cherrios new chocolate flavor. it's full of vitamins and and she thinks it's a treat!

i also but whole wheat pancake mix. it really doesn't take that long to make pancakes in the morning if you buy the "just add water mix". hope that helps.

We love a tablespoon of peanutbutter and all fruit jam on wholewheat French toast.

Try a twist on the oatmeal:

I make the oatmeal, drop in a handful of walnuts or pecans (in pieces), sliced banana, sprinkle with cinnamon, a drop of vanilla, and top with honey.

Do the samething with different fruit. If you use fresh apples or peaches, sprinkle them first with cinnamon and stir. Then, microwave them 2-3 minutes before putting them in the oatmeal. I've used coconut and banana too, yum.

My kids love pancakes, so I I make mine with whole grains (oatmeal, whole wheat, flax seed), and add fruit or pumpkin!

We do lots of fruit and whole grain cereals/oatmeals. Lately what I've done is buy a healthy and organic pancake mix and add wheat germ and blueberries to it, cook them up and keep them in the freezer and take them out as needed. Feels a bit healthier than the other frozen pancake/waffle options and is quick to prepare. I'll even add a pinch of cinnamon and vanilla to make it tastier so I don't have to use as much (if any) pure maple syrup.

We love cracked (or chipped) wheat. It does take a while for it to cook so be prepared for that. But you can make a bunch and then keep it in the fridge and reheat it in the mornings with a bit of added water or milk.
It takes 4 cups of liquid per 1 cup of the cracked wheat. Bring your water to a boil, or milk to a scant boil (almost boiling). Then add a pinch of salt and your wheat. stir and boil (scant boil, for milk) until the water is all absorbed and you can see the bottom of the pot when you stir it. Shouldn't be too runny. I like to make it with half milk and half water, or half water and half coconut milk that is good too.
We use dried fruits (coconut, pineapple, raisins, mangoes, cherries) fresh fruits, any kind of nuts. For the sweetness, I like it with all the goodies in it, and nothing else. (my favorite being tropical flavors) But my kids like it a little sweeter, so they use honey or brown sugar or maple syrup, and sometimes I let them put fifteen small semi sweet chocolate chips in. Then add a little milk on top so it is not too hot, and eat it up.

My kids are cereal eaters in the morning , they like cheerios and weetabix (weetabix is very filling) and you can add fruit to it such as sliced banana , blueberries , strawberries , you can also add yogurt instead of milk. If they don't want cereals then they like a toasted english muffin or bagel.

Grits, spice up your eggs (egg with spinach, egg and cheese, etc) fruits - I substitute with fruit cups. My son likes Strudels, bread and cheese, toasted ham and cheese, bagels, cereal, waffles

A couple ideas and you can look and find several recipe versions and change to fit what you like.

A Breakfast Strata/Casserole. Eggs/Sausage/Bread/Cheese. - Make it up at night, say Sunday Night, then stick it the oven as quick as you wake up or go ahead and cook it at night if you prefer. It takes about an hour to cook. You can then cut it up in portions and reheat in the microwave for a quick breakfast.

Pancakes - Mix your batter up one morning or at night, anyhow mix enough that it will last you or day or so. You can do this from scratch and adjust the recipes you find to what you prefer.

Oooh fun! Smoothies--Kids love them--Yogurt, berries, bananas, milk or o.j.--So many different flavors & combinations you can always mix it up. Same with oatmeal--You can add dried fruit or bananas or even coconut & pineapple. My favorite new oatmeal recipe is with bananas, pineapple & coconut but there's always the standard, yummy brown sugar, too. My personal favorite healthy breakfast is 1/2 of a Boca "fake" chicken patty (breaded) on a low fat (Pillsbury Jr) biscuit. Total 6 grams fat & a good amount of protein. (A lot like a Chick Fil A chicken biscuit, though, good for when you're on the run. I make the biscuits at night & then wrap the chicken biscuits individually) Have fun!!!

My kids and I like Morning Star Farms "sausages". We alo make cinnamon toast with whole wheat bread. Oatmeal with a spoonful of peanut butter and honey and add wheat germ. And we always have fruit. YUM! to everyone's ideas.

Yogurt with frozen blueberries gives us a lot of fiber and a tablespoon of granola is wonderful and crunchy. Smoothies with kale or spinach (believe me you won't taste it) is very good. I use frozen fruit and frozen bananas. I peel a ripe banana, cut it into 3-4 chunkc and freeze in a ziploc bag.
Scrambled eggs with fiber powder, cooked sausage crumbles or crisp bacon with shreeded cheese rolled into a warm tortilla is very good. My husband loves the smoothies and all else I mentioned.

fruit is always a good idea. i like to make fruit smoothies in the morning. it's quick and good for you.
