In Need of Some Dairy-Free, One-Dish Meal Ideas

I am having our third child in September by C-section (our last two were also C-sections) and I really need to have some one-dish meal ideas that I can freeze away for use during that week or two when I will not feel like cooking. Problem is..I have a three year old who is allergic to milk or dairy, and ALL of the casserole recipes that I am familiar with either contain cheese or you have to add milk. He CAN have things where the milk is baked (like if it is used in a pie crust). Baking it does something to the protein in the milk that makes it okay. But..if the milk stays in any sort of liquid form it won't work. We usually just separate his meals before we make our casserole (like if the casserole is made with chicken, noodles, and veggies, we take some out as separate dishes before we mix the casserole together), but that won't work if we're going to be freezing the meals. Any suggestions?

I have never tried freezing this recipe but it tastes just as good warmed up so I would imagine it would be fine.

Chicken casserole:
melt 1 stick butter or margrine
toss w/ 6 slices of shredded bread
mix in two beaten eggs
1 can mushroom soup
2 cans chicken noodle soup
2 small cans of chicken (they come in cans like tuna)

Grease 9" baking dish. Bake 1 ____@____.com about meatloaf, chili, BBQ for sandwiches or sloppy joes. I would probably stock up on the chicken nuggets, fish sticks, hot dogs, sandwich stuff or things can you can just throw in the oven.

Hey A.:

We have the same issues with our 4 year old. I usually try to substitute soy milk or soy yogurt for any milk ingredients in casseroles. It does taste a little bit different, but it's not that noticeable. I'd suggest try a few before you make a big batch to see if you like the taste.

It will be close to fall when the baby comes home. Most soup recipes freeze well. There may be more options with soup than casseroles. I also had 2 children that were severely allergic to dairy. I used soy or rice milk. these two options work well in casseroles. They also make soy cheese. In my opinion, these are healthier for you any way. If you think about it, in nature milk is made to grow a 100# calf into a 1000# cow.
I feel for you, it is a challenge in our society to be creative with out using dairy. It is in everything.

It might be a little bit spendier, but I'd check at your local co-op or health foods store to see if they have boxed/prepared dairy-free meals. I know ours has some dairy-free mac and cheese and other things like that. Also, you might be able to ask someone for ideas on dairy-free things to make. Good luck with your pregnancy and your new baby!

Beef stew is a good one. I use this recipe http://www.epicurious.com/recipes/recipe_views/views/104817 but, I add 3/4 cup of flour by wisking it into a bit of beef broth before putting it into soup. I also add mushrooms.

Also, chicken soup freezes well.

Can he drink soy milk or goat's milk? If so, you can substitute this milk for regular milk. They also make cheeses that can be substituted as well. Consider buying some meals from Let's Dish or Sociale Gourmet. The dinners are fabulous and perfect for grabbing out of the freezer in a hurry. I've come across very few that use milk or cheese too. My 2 year old is allergic to milk too so I know what you're going through.

Check out kraftfoods.com, that's where I find a lot of good recipes. Just type in the ingredient(s) you have and they will come back with quite a few different dishes, not all will be freezable tho. I just made their "brushetta chicken bake" and it didn't have any dairy in it and I am sure you can find more. You are right tho, a lot, if not most, casseroles contain dairy so you will probably have to weed thru a few before you find several you can use. Could you possibly use soy milk instead of regular milk when it calls for it in the recipe or he is allergic to soy milk as well? Just an idea. Good luck

Creamed Chicken or Turkey

1/2 c finely chopped onion
1/3 c margarine (substitutes)
1/4 c flour
1 1/2 c canned chicken or turkey broth
2 teas. salt
1 teas. MSG
2 slightly beaten egg yolks
3 c diced cooked chicken or turkey
1 6-oz. can sliced mushrooms, drained (pre-cooked or broiled)
1 1/2 c non-dairy coffee creamer
(use either the "non-dairy" coffee creamer described above or use "coffee-mate or another liquid creamer) If you are casein allergic, try Oat Milk because "non-dairy" coffee creamers contain casein.

Melt margarine (substitutes and I suggest a shortening mixture) in a deep walled frying pan and cook the onion in it, just until tender, not browned. Blend in flour. Slowly stir in the broth and non-dairy creamer (substitutes and I suggest Oat Milk). Add seasonings. Cook and stir over medium heat until mixture thickens. Stir a small amount of hot water into egg yolks; return to hot mixture: cook and stir over medium heat for 1-2 minutes. Add chicken or turkey and mushrooms; heat until just heated through. Serve over hot bisquits

My grandmother used to make a casserole that had 1-1 1/2 lbs browned ground beef, one bag of mixed frozen vegetables and a little garlic. She browned the meat first then added the vegetables and baked for around 20 minutes. The vegetables are tender enough for a three year old and the meat provides a good source of protein and it can be frozen and reheated. I am sure you could get creative and add other ingredients.

Hi A.! I have a great meal that I make that is dairy free and gluten free!

Southwest Slop
2 lbs cubed meat (beef, chicken or pork) or ground beef
1 medium chopped onion
2 cloves minced garlic
1 pkg frozen corn
1 can beans (I like black beans)
1 can diced tomatoes (I use with onions)
Southwest Spices to taste (I use 2 tbsp)

Brown meat, onions, and garlic. Add rest of ingredients. Bring to a boil and simmer for 7 minutes or until corn is heated through. I serve over Basmati rice or corn meal pasta.

Another thing I used to do is make packages of rice a roni and throw in some meat and a vegetable.

Some very easy meals are chicken pot pie muffins and hot dog cassrole. These are recipes I originally got off of www.aimeesadventures.com and have been a easy go to idea for when I am in a pinch.
Chicken Pot Pie Muffins
1 container of ready made biscuits
2 cups of chicken or 2 microwaved bonless chicken breasts diced
ready made chicken gravy
2 microwaved potatoes diced
1 can of mixed veggies

Press the ready made biscuits into a 12 spot muffin tin making sure that the biscuit comes up the side
spoon the chicken veggie mixture into each muffin tin
bake at 350 for about 15 minutes checking the biscuits for doneness. You can also put this in a caserole and cover with the biscuits and bake.

Chili Hot Dog Caserole

1 package of turkey dogs or low fat hot dogs
1 package of hot dog buns
1 can of Hormel turkey chili or regular chili
1 tsp mustard or to taste and katchup
1/2 cup onions optional
1 cup shreaded cheese or soy cheese optional
Pam or cooking spray

Spray the bottom of a caserole with Pam and heat oven to 350
rip apart buns and lay on bottom of caserole.
Cut hot dogs lengthwise and chop into small pieces for the kids
Mix the turkey chili with katchup and mustard and put over the hot dogs
Top with cheese(optional). Bake for about 15 minutes until chili is heated through.

My favorites for freezing:
Chili (we are primarily vegetarian and, in a hurry, the chili can be whipped up pretty much from canned, although we prefer to start from scratch and just make a ton); chicken or vegetable fried rice or lo-mein (freezes well too, just use either fresh or frozen veges so they don't get too soggy); pasta dishes with tomato bases sauces, soy alfredo, or olive oil and herbs; vegetable or beef stews; have you also thought of "breakfast for dinner"? When I was on bedrest with my third pregnancy, my other two children loved making pancakes and eggs for dinner or even Irish Oatmeal with brown sugar. You also can make your own pizzas and use soy cheeses or make them breakfast pizzas with eggs and bacon or salsas and vegetables on them. A great pizza crust is easy to make: 1 package quick rise yeast mixed with 1 cup of warm water. Then add two cups flour, a few TBSP olive oil, 1-2 tsp sugar, and whatever herbs you'd like to add. We occasionally add a bit more sugar and some soy cheese and merely make really tasty breadsticks for snacks and dipping. The dough freezes well too. Make a ton of pancakes or waffles and freeze them. Lasagna freezes well. The stews can also quickly be baked with a mix of Bisquick or cornbread on top and you have a very simply and quick Shepherd's Pie or, if it's a chicken based soup or a vegetable soup, you can also quickly turn it into a pot pie!
