I have had great luck with Paula Deen's caramel corn recipe. You can find it on foodnetwork.com We add peanuts to it or you can add M&M type candies too! Anyway, the recipe for the caramel is delicious and I would definitley try it.

You can follow the first recipe but instead of baking it you place popcorn in a brown paper sack (like one you get from the grocery store) and pour mixture on top, shake it and put in the microwave for 1.5 minutes, take it out and shake it and put it in for another 2 minutes and you are done!!!! Super easy and DELICIOUS!!!!!

16 cups popped popcorn (you can buy in the chips/pretzel aisle, Okee-Dokee is the brand I think)
5 cups mini pretzels
1 cup salted peanuts ( you can leave out)
1 cup butter
2 cups packed brown sugar
1/2 cup dark corn syrup
1/2 tsp salt
1/2 tsp baking soda
1 large bag m&m's

Heat oven to 200 degrees. Combine br sgr, corn syrup and butter, heating over med high heat in a non stick stock pot. Heat until bubbly and boiling. Let boil like this for 3-4 minutes. Take off heat and add the salt and bk soda. The sugar mixture will puff up. While the sugar mix is cooking prepare the popcorn (I use corn chex alot too), pretzels and peanuts in a large turkey roaster. Once the sugar mixture is done and you've added the bk soda pour the sugar mix over the popcorn mix and stir to coat. Bake in 10 minute increments, stiring at the 10 minute mark for 30 minutes. Once out of the oven, and cooled slightly, add the m&M's and store in tightly sealed container.
